Crispy Smashed Potatoes - Easy Thanksgiving Side

These Crispy Smashed Potatoes are super crunchy on the edges, but fluffy and soft in the middle. It's reminiscent of a french fry, but so much easier to make!

Ingredients

Potato 1 1/2 Pound ((creamer))
Salt 3 Tablespoon ((use as required))
Grapeseed oil 1/4 Cup (4 tbs)
Pepper To Taste

Directions

GETTING READY:

1. Preheat oven to 450F.

MAKING:

2. Rinse the potatoes well and scrub if needed. Place in a pot and cover with cold water. Add 2 tbsp of salt to season the water.

3. Bring the water to a boil, then cook the potatoes for 15 minutes until fork tender.

4. Drain the potatoes and let sit for 2 minutes to dry.

5. Place the potatoes on a sheet pan and smash with a measuring cup or glass. Sprinkle with salt and pepper, then drizzle with the oil. Toss the potatoes in the oil to coat.

6. Roast in the oven for 25-30 minutes until crispy on the bottom and edges.
