Stuffed baked potato skins are a hearty appetizer or party snack for Halloween or game days! Potatoes, bacon, cheese, green onions and cock sauce, of course!
Russet potatoes | 4 , scrubbed, rinsed, pierced, microwaved for 12 minutes as shown in the video | |
Bacon strips | 4 | |
Butter/Reserved bacon fat | 4 Tablespoon | |
Chili powder | 2 Teaspoon | |
Paprika | 1 Teaspoon | |
Salt | 1 Teaspoon | |
Shredded cheddar cheese | 1 1/2 Cup (24 tbs) | |
Sliced green onions | 1/4 Cup (4 tbs) | |
Toppings | To Taste ((Sriracha, salsa, sour cream, sliced jalapeos)) |
GETTING READY:
1.Preheat oven to 450F.
MAKING:
2.Heat a skillet and melt butter in it. Add chili powder, paprika and stir well.
3.Cut potatoes and scoop out flesh as shown in the video.
4.Place on cast iron skillet and brush sides with seasoned butter.
5.Sprinkle salt and pop into oven.
6.Bake for 30-35 minutes until browned.
7.Remove from oven and sprinkle cheese and bacon bits over it. Bake for another 5 minutes until cheese melts.
SERVING:
8.Serve with desired toppings and enjoy!
