These crunchy smashed roasted potatoes with bacon, thyme and mustard will be your new favorite side dish. Mix up the seasonings and feel free to make them vegetarian with the tips in the video.
New potatoes | 1 Pound (small) | |
Salt | 1 Teaspoon , divided | |
Bacon strips | 2 , finely chopped (optional) | |
Bacon grease/Fat | 1 Tablespoon | |
Grainy mustard | 1 Tablespoon | |
Fresh thyme leaves | 2 Tablespoon | |
Black pepper | 1/2 Teaspoon |
GETTING READY:
Preheat oven to 425°F.
MAKING:
In a pot, boil potatoes with water and add ½ teaspoon of salt to it. Cover with a lid and cook for 10-12 minutes or until tender.
Add 1 tablespoon of bacon fat and mustard and stir well until potatoes are well coated.
Drain well and transfer the potatoes to a cast iron skillet. Mash using bottom of a glass as shown in the video.
Spoon the leftover mixture over potatoes.
Sprinkle bacon bits, thyme, remaining salt and pepper over the potatoes and pop into oven.
Bake for 15-20 minutes at 425°F until browned.
