Talented chef Barry Lewis is back with his hearty and delicious cooking for you and your family. This week he is showing you how to make loaded potato skins, perfect for a quick dinner or a buffet party food.

Grated mature cheddar cheese | 200 Gram | |
Bacon slices | 6 | |
Button mushrooms | 8 | |
Sour cream | 85 Gram | |
Fresh chives | 2 Tablespoon | |

GETTING READY:
Preheat the oven to 200°C.
MAKING:
Pierce potatoes using fork and pop into oven. Bake at 200°C for 50 mniutes.
Once done, cut into halves and scoop the core of potatoes as shown in the video.
In a large bowl, combine 1 tablespoon of mashed potato, cheese, mushrooms, 3/4th quantity of crumbled bacon, 70 gram sour cream, chives, salt, pepper and mix well.
Baste the potato skins with melted butter and season with salt and pepper to taste.
Pop into oven and grill for 2-3 minutes.
Fill the skins with prepared mixture and bake for another 2-3 minutes.
Garnish with chives and sour cream.
