Lemony Roasted Potatoes

Potatoes are everyones favourite and when you pair it with lemon, it surely elevates the flavour. Try this version next time you are thinking potatoes.

Ingredients

Russet potatoes 5 Medium , peeled and cut into wedges
For fresh lemon vinaigrette
Fresh oregano 2 Tablespoon , roughly chopped
Fresh lemon juice 1/4 Cup (4 tbs)
Kosher salt 2 Teaspoon
Red pepper flakes 1 Teaspoon
Olive oil 1/4 Cup (4 tbs)
Chicken stock 3 Tablespoon

Directions

GETTING READY

Preheat the oven to 375 degrees. Line a cookie sheet with foil and set aside.

MAKING

Place the potatoes on top of the prepared foiled.

For the fresh lemon vinaigrette – In a mixing bowl, whisk together the oregano, lemon juice, salt, pepper flakes, olive oil and chicken stock.

Pour over the potatoes and cover with foil and poke a couple holes to release some steam.

Roast in the oven for 45 minutes, until the potatoes are fork tender. After about 45 minutes, take off the foil from potatoes and roast uncover for another 10-15 minutes.

SERVING

Serve potatoes with some roasted chicken.
