Pulled Pork - How to Smoke Pork Butt on the UDS!

So I was tossing the idea around of doing some pulled pork and at the last minute decided to pull the trigger. This video was not planned so bare with me on this one. The pork was slathered in mustard sauce and coated with a coffee-chilli rub I did for the prime rib on Thanksgiving. I smoked it at 275 for about 10-11 hours till it hit 195-200 internally. I wanted to let it rest for an hour or so but I was running out of time.

Ingredients

Pork butt 8 Pound (boneless)
Coffee chilli rub 1 Cup (16 tbs)
For the mustard sauce
Apple cider vinegar 2 Cup (32 tbs)
Onion 1 Cup (16 tbs) , grated
Mustard 1 Cup (16 tbs)
Brown sugar 1 Cup (16 tbs)
Worcestershire sauce 2 Tablespoon
Siracha sauce 1 Tablespoon (to taste)
Garlic 2 Tablespoon , minced
Salt and pepper To Taste
For apple cole slaw
Fuji apple 5 , peeled, julienned
Mayonnaise 1 Cup (16 tbs)
Honey 1/3 Cup (5.33 tbs)
Apple cider 1/4 Cup (4 tbs)
Poppy seeds 1 Teaspoon
Kosher salt To Taste
Pepper To Taste
Chopped nuts 1/4 Cup (4 tbs) (pecan/walnuts)
Cole slaw mix 500 Gram (1 pack)
Green onion 2 , chopped finely (Optional)

Directions

GETTING READY

For The Mustard Sauce

1. In a pan on medium heat add all the ingredients and whisk well till mixed. Reduce the heat to low and let it simmer for around 20 minutes. Turn off the heat and let it cool.

For Smoking Pork Butt

2. In a large pot put the pork butt. Pour the mustard sauce and let it marinate in the fridge for few hours.

3. Rub it well with coffee chilli rub and put it in the smoker for about 10 hours adjusting the temperature to 275 degrees F. Spray with apple juice occasionally while continuously smoking it till done or the internal temperature reaches 200 degrees F.

4. Once done, remove from the smoker and let it sit for 1 hour before shredding it.

MAKING

For the Apple Cole Slaw

5. In a large bowl, add all the ingredients except the Cole slaw mix and stir well till combined. Add the Cole slaw mix and toss it well till all are coated.

For the Pulled Pork Butt

6. Take the smoked pork butt that has been sitting for 1 hour. Using fork shred it well.

SERVING

7. In a serving plate, serve the pulled pork with choice of bread and apple Cole slaw and mashed potatoes or serve it in bread as a sandwich.
