Pork Roast Barbecue

Ingredients

Boneless pork loin roast 4 Pound , rolled (1 piece)
Water 2 Cup (32 tbs) , divided
Salt 2 Teaspoon , divided
Tomato puree 16 Ounce (1 can)
Brown sugar 1 Tablespoon
Vinegar 1 Tablespoon
Worcestershire sauce 1 Tablespoon
Browning sauce 1 Teaspoon
Pepper 1/4 Teaspoon
Dry mustard 1/4 Teaspoon
Hot pepper sauce 1/4 Teaspoon

Directions

GETTING READY

1. Preheat oven to 350°.

MAKING

1. In a heavy 5-qt. roaster or Dutch oven put the roast.

2. In a small bowl mix 1 cup water and 1 teaspoon salt.

3. Pour this solution over meat.

4. Cover tightly and cook on low flame for 2 hours.

5. Drain out the meat and reserve 1 cup broth.

6. Keep aside the roast to cool for 15 minutes.

7. With a sharp knife cut into thin slices.

8. In an 11-in. x 7-in. x 2-in. baking dish arrange the meat.

9. In a 2-qt. saucepan add tomato puree, sugar, vinegar, Worcestershire, browning sauce, pepper, mustard, hot pepper sauce, remaining water and salt and reserved broth. Mix well.

10. Bring it to boil.

11. Cook and stir for 3 minutes.

12. Transfer the mixture over meat.

13. Cover and refrigerate for a night, turning once.

14. Take out from refrigerator 30 minutes before reheating.

15. Cover and bake for 1 hour.

SERVING

16. Serve on buns.
