Apple Stuffed Veal Chops

Ingredients

Veal chops 2 Pound , excess fat trimmed (4 pieces, 1/2 pound each)
Tart apples 2
Lemon 1/2 , juiced
Golden raisins 2 Tablespoon
Salt To Taste
Pepper To Taste
Vegetable oil 1 Tablespoon
Margarine/Butter 2 Tablespoon
Golden raisins 2 Tablespoon , soaked in 1 tablespoon of sherry (for garnish)

Directions

GETTING READY

1) Preheat oven to temperature of 225 degrees.

2) With the help of a sharp knife, make a pocket in every chop. Horizontally slit, from the outside edge to the bone, cutting through to within about ½-inch of the edge.

3) Quarter 1 apple and then pare and core it. Cut into ¼-inch slices and put them into a bowl along with the lemon juice.

4) Toss the apple slices in the lemon juice and then add 1 teaspoon of ground cloves and golden raisins to the bowl. Mix thoroughly together.

5) Into the pocket of each chop, spoon the apple mixture, dividing it evenly between them.

6) With wooden toothpicks, secure the slit edges and with the remaining ground cloves, sprinkle the chops. Season to taste.

MAKING

7) In a large skillet, heat the margarine and oil and add the veal chops. Cook over high heat for about 2 to 3 minutes on each side in order to brown and seal.

8) Reduce the heat and continue to cook for another 10 to 15 minutes on each sides, till the veal is thoroughly cooked and the juices run clear when a sharp knife is used to pierce the meat.

9) Pare the remainder of the apples and core them. Slice into rings.

10) With the help of a spatula, transfer the chops to a warmed serving plate. Keep them warm in the preheated oven.

11) To the skillet, add the apple rings and gently cook, turning carefully to ensure that the rings do not break up. Cook till golden brown.

12) On top of the chops, arrange the cooked apple rings. Into the center of the rings, spoon the golden raisins.

SERVING

13) Serve the dish while still piping hot. Makes an excellent main course dish and goes really well with red wine.
