Boneless pork loin | 5 Pound , sliced thin | |
Ground cloves | 1 Tablespoon | |
Ground allspice | 1 Tablespoon | |
Ground ginger | 1 Tablespoon | |
Jamaican hot curry | 1 Tablespoon | |
Paprika | 1 Tablespoon | |
Chili powder | 1 Tablespoon | |
Ground cumin | 1 Tablespoon | |
Salt | 1 Tablespoon | |
For the veggies: | ||
Red cabbage head | 1 , sliced thin | |
Carrots | 3 Large , sliced | |
Fresh scallions | 3 Bunch (300 gm) , sliced | |
Garlic | 6 Clove (30 gm) , sliced | |
Red onion | 1 , sliced | |
Sesame oil | 1 Teaspoon | |
Olive oil | 1 Teaspoon | |
Salt | To Taste | |
Jamaican hot curry powder | To Taste | |
Paprika | To Taste |
For the Pork Loin:
Combine all of the ingredients for the rub and place in bowl with the sliced pork. Mix well onto the meat. Cover and place in refrigerator for at least one hour or longer.
Heat a griddle and place the slices of pork on the hot griddle to grill.
For the Veggies:
Combine all of the sliced veggies in a large bowl, except the garlic and red onion. Add a tablespoon of salt and toss.
Heat a large frying pan with a drizzle of olive oil. Add the garlic and sliced red onion. Add a teaspoon of Jamaican Hot Curry Powder and paprika along with a tablespoon of sesame oil. Sauté until the onion is clear. Add the rest of the veggies and toss. Cook the veggies down until the desired crispness. Re-season to taste.
