Center Cut Pork Loin Stuffed with Chorizo Cream Cheese

On this video recipe I take a center cut pork tenderloin and stuff it with chorizo, cream cheese, black beans, roasted bell peppers, green chili's, and sweet corn. Smoke it with some cherry wood and you have one hell of a meal..Enjoy.

Ingredients

For the stuffing
Cream cheese 16 Ounce (at room temperature)
Canned black beans 1 Cup (16 tbs) , drained
Chopped cilantro 1/4 Cup (4 tbs)
Diced green chiles 1/4 Cup (4 tbs)
Sweet corn 1 Cup (16 tbs)
Roasted bell pepper 1/2 Cup (8 tbs)
Diced tomatoes 1 Cup (16 tbs)
Cooked chorizo 24 Ounce
Mexican cheese blend 1 Cup (16 tbs)
Other ingredients
Pork loin 2 Ounce
Chili rub To Taste (Big Green A)

Directions

GETTING READY

1.       Preheat the grill to 225 degrees F.

 

MAKING

2.       For the stuffing – in a large bowl, mix together all the ingredients.

3.       Prick the pork loin using a fork and season with chili rub. 

4.    Place stuffing over the pork and roll. Tie with a string and place in the refrigerator.

5.   Wrap the edges with aluminum foil and place over the grill and cook for two hours until the internal temperature reaches 165 degrees F.

6.   Take off the pork from the grill and let it rest for 25 – 30 minutes.

 

SERVING

7.    Slice the pork and serve.
