Andouille Stuffed Pork Loin

Ingredients

Brown sugar 1/2 Cup (8 tbs)
Kosher salt 1/2 Cup (8 tbs)
Bay leaves 3
Thyme 8
Yellow onion 1 , roughly chopped
Garlic 6 Clove (30 gm) , roughly chopped
Peppercorns 20
Pork loin 3 Pound
Andouille sausage 1 , poke holes all across the length
Salt 1/2 Tablespoon
Cracked black pepper To Taste
Smoked paprika 1 Tablespoon
Cumin 1 Tablespoon
Garlic powder 1 Tablespoon
Hot seasoning 1 Teaspoon

Directions

GETTING READY

1. In a big pot, take water and boil it with sugar, salt, bay leaves, thyme, peppercorns, onion and garlic. Cool the brine down.

2. Place the pork loin in a big bag. Pour the brine over the pork loin in the zip loc bag. Seal the bag and place the pork in the refrigerator for about 2 hours.

3. Prepare the grill dome for cooking.

 

MAKING

4. Remove the pork loin from the brine and place it on the paper towel. Dry it up.

5. Insert a rod in the centre of the pork loin to make a hole. Insert anadouille sausage in the hole. Slice off the ends to create a flat surface.

6. Season the pork loin with salt, craked black pepper, smoked paprika, cumin, garlic powder and hot seasoning on both sides.

7. Place the pork loin on the hot grill and sear it on all sides.

8. Place a deflector plate and close the dome lid and let the meat cook at 325 F until the meat reaches an internal temperature of 165 F.

9. Wrap the loin in an aluminium foil and rest it for 15 minutes.

 

SERVING

10. Slice the loin in 1/2 inch slices and serve.
