I call them coffee Creamsicles.
Coconut milk | 1/4 Cup (4 tbs) | |
Instant coffee | 1/2 Tablespoon | |
Cocoa powder | 1/2 Tablespoon | |
Vanilla bean paste | 1/2 Teaspoon | |
Pitted dates | 4 | |
Bananas | 3 | |
Mini chocolate chip | 1/4 Cup (4 tbs) |
MAKING
Place a saucepan, over the medium heat and pour coconut milk.
Add filter coffee and cocoa powder and stir; bring to a boil.
Take off the saucepan from the stove and mix vanilla paste. Let it cool.
In a food processor, blend together banana and dates.
Pour the banana mixture into the coconut mixture and stir well.
Add in the chocolate chips and stir.
Using a funnel pour the mixture into the popsicles moulds and refrigerate for 6 – 8 hours.
SERVING
Carefully take out the popsicles and serve.
