Roasted Butternut Squash and Bacon on a pizza? Yes, it would be delicious.
Ready to serve original pizza crust | 1 Large | |
Butternut squash | 1 Cup (16 tbs) | |
Bacon | 3 Ounce ((3 slices)) | |
Onion | 1 Medium | |
Red pepper flakes | 1 Teaspoon | |
Olive oil | 1 Tablespoon | |
Parmesan cheese | 1 Cup (16 tbs) | |
Flour | 1/2 Cup (8 tbs) |
GETTING READY
1.Pre-heat oven to 475F.
MAKING
2.Cook bacon and drain on a plate with a paper towel.
3.Slice squash and onion. Roast squash with a little olive oil and salt, for 10 minutes (until slightly browned and soft inside, crispy outside).
4.Roll out pizza dough on lightly floured pizza stone or pan. Top with a tiny bit of olive oil, salt (opt.) and red pepper flakes (can also bake plain, which is great too). Bake for 5 minutes.
5.Top crust with a tiny bit more olive oil, parmesan cheese, squash, onion, bacon, and parmesan cheese. Bake for 6-8 minutes.
6.Bake for 6-8 minutes.
SERVING

Notes
Prep time doesn’t include making the pizza dough (which can be made ahead of time and frozen).
Third time I made this, I omitted the red pepper flakes and onions, and added mozzarella. It was best this way!
Great green salad: lettuce, sliced pear (or apple), nuts (walnuts or almonds). Dressing: whisk together some balsamic vinegar with olive oil and honey.
