Sweet Potatoes On Pineapple Rings

Ingredients

Sweet potatoes 2 Cup (32 tbs) , cooked, mashed
Packed brown sugar 2/3 Cup (10.67 tbs)
Butter 1/4 Cup (4 tbs) , melted
Orange juice 1/2 Cup (8 tbs)
Pumpkin pie spice 1 Teaspoon
Orange peel 1 Teaspoon
Pecans 1/4 Cup (4 tbs) , chopped
Raisins 1/2 Cup (8 tbs)
Canned sliced pineapple 20 Ounce (1 No. 2 Can)
Miniature marshmallows 1/4 Cup (4 tbs)

Directions

MAKING

1 In a bowl, add sweet potatoes, brown sugar, butter, orange juice, pumpkin pie spice, orange peel, pecans and raisins, mix well.

2 Drain pineapple slices well.

3 In a baking dish, place the pineapple slices.

4 On top of each pineapple slice, mound 1/3 cup of the sweet potato mixture

5 Bake in 375┬░Fahrenheit oven for 20 minutes.

6 Top with marshmallows and bake for another 5 minutes.

SERVING

7 Serve as desired.
