Shrimp And Bacon Pilaf

Bacon slices 6 , diced
Chopped onion 1 Cup (16 tbs)
Regular long grain rice
Canned chicken broth 13 3/4 Ounce (1 Can)
Tomatoes 2 Medium , chopped
Lemon juice 2 Teaspoon
Ground black pepper 1/4 Teaspoon
Ground red pepper 1/8 Teaspoon
Medium shrimp 1 Pound , peeled and deveined


In large skillet, over medium heat, cook bacon until crisp; remove from pan and set aside, reserving 1 tablespoon drippings.

In same skillet sauté onion in reserved drippings until tender; stir in rice, broth, tomatoes, lemon juice and peppers; bring to a boil.

Cover; reduce heat and simmer 25 minutes or until rice is tender.

Stir in shrimp and bacon; cook and stir until shrimp is cooked and pink, about 5 minutes.

Garnish with parsley if desired.
