Gran's Pecan Pie

We love pecan pie - but living in Canada we have our own interpretation that is closer to our beloved butter tart with pecans thrown in... Now if you are looking for the very sweet modern day Southern pecan pie this may disappoint. If however you are looking for a well balanced flavorful pie this is it.


Maple syrup 250 Milliliter (1 cup)
Packed brown sugar 225 Gram (1 cup)
35% cream 125 Milliliter (1/2 cup)
Molasses 1 Tablespoon
Butter 4 Tablespoon , cut up
Salt 1/2 Teaspoon
Egg yolks 6 Large
Toasted pecans 175 Gram , some whole, some chopped
Deep dish pie shells 1 , unbaked (9



1. Preheat oven to 450 degree F or 230 degree C.


2. In a saucepan combine maple syrup, brown sugar, cream, and molasses. Place the pan over medium heat, stir and cook until the sugar dissolves. Remove from heat and allow to cool for 5 minutes.

3. Whisk butter and salt into syrup mixture until combined.

4. In a bowl, whisk egg yolks and pour it into the saucepan with maple syrup mixture. Mix well.

5. In the bottom of the deep dish pie shell, arrange pecans and pour sugar maple syrup mixture over it.

6. Place pie in preheated oven, reduce oven temperature to 325 degree F or 160 degree C and bake for 50-60 minutes or until filling is set and center just wobbles slightly when pie is shaken.

7. Remove from oven and let pie cool on rack and then refrigerate for about 2 hours or until set.


8. Cut in wedges, serve and enjoy!
