Pecan Pie! In a cookie bar... Soo good!
For the crust | ||
Unsalted butter | 250 Milliliter , softened (1 cup) | |
Packed brown sugar | 150 Milliliter (2/3 cup) | |
All purpose flour | 650 Milliliter (2 2/3 cups) | |
Salt | 1/2 Teaspoon | |
For the filling | ||
Unsalted butter | 125 Milliliter (1/2 cup) | |
Packed brown sugar | 250 Milliliter (1 cup) | |
Honey/Maple syrup | 75 Milliliter (1/3 cup or corn syrup) | |
35% cream | 30 Milliliter (2 tablespoons) | |
Chopped pecans | 500 Milliliter (2 cups) |
GETTING READY
1. Preheat oven to 350 degree F or 180 degree C.
2. Line a 9×13- inch cake pan with parchment paper, leaving enough for a 2-inch overhang on long sides.
MAKING
3. In a large mixing bowl, cream together butter and brown sugar until fluffy.
4. Add salt and flour (in 2-3 addition). Mix until crumbly.
5. Into the cake pan, transfer the mixture and press firmly to form crust.
6. Pop the cake pan in oven and bake for 20 minutes or until golden brown.
For Filling:
7. In a saucepan, combine butter, brown sugar, honey and 35% cream. Place the pan on medium heat, stir and bring the mixture to a simmer. Cook for 1 minute.
8. Add chopped pecans and stir well.
9. Immediately pour the pecan filling over the still hot crust. Spread it evenly.
10. Place the pan back into the oven and bake for an additional 20 minutes. Don't over-bake.
11. Remove cake pan from oven and allow the bars to cool completely in the pan before lifting out and cutting.
SERVING
12. Cut into bars and serve!
