Pineapple Cheese Pie

Evaporated milk 3/4 Cup (12 tbs)
Pineapple 1 Cup (16 tbs) , drained and crushed
Sugar 1/4 Cup (4 tbs)
Salt 1/2 Teaspoon
Egg 1 , beaten
Lemon gelatin 1/4 Cup (4 tbs)
Cream style cottage cheese 1 Cup (16 tbs)
9 inch pie shell 1 , baked



1) In a bowl, pour the milk and place inside refrigerator to chill.


2) In a heavy saucepan, add pineapple, sugar, salt and egg to combine.

3) Place the saucepan over low heat to cook until thickened, stirring constantly.

4) Remove the saucepan from heat and gently dissolve gelatin into the mixture.

5) Bring out the chilled milk and beat to thick and fluffy.

6) Fold in fruit mixture and cottage cheese, one by one.

7) Place inside refrigerator to chill for 20 minutes.

8) In a baked pie shell, turn out the mixture.

9) Place back inside refrigerator to chill for several hours, or overnight, before cutting.


10) Serve chilled by garnishing with fresh pineapple slices, if desired.
