Cranberry Cheese Pie

Ingredients

Corn flakes 1/2 Cup (8 tbs) , finely crushed
Brown sugar 1 Tablespoon
Butter/Margarine 2 Tablespoon , melted
Gelatin envelope 1/4 Ounce (1 envelope, Non
Cold water 1/4 Cup (4 tbs)
Milk 1 3/4 Cup (28 tbs)
Eggs 2 , separated
Brown sugar 1/3 Cup (5.33 tbs)
Salt 1/8 Teaspoon
Lemon pudding and pie filling mix 3 1/2 Ounce (1 package)
Cottage cheese 8 Ounce , creamed, sieved (1 carton)

Directions

GETTING READY

1) Butter a 9" pie pan and place aside.

MAKING

2) In a bowl, combine corn flakes, brown sugar and butter.

3) Firmly place the mixture into the pan.

4) In cold water, soften the gelatin.

5) In saucepan, add milk and egg yolks to combine.

6) Beat thoroughly to blend.

7) Add sugar, salt and lemon pudding to mix well.

8) Place the saucepan over medium heat.

9) Stir and heat until mixture comes to a boil and is thickened (about 5 minutes).

10) Remove from heat and add gelatin.

11) Thoroughly dissolve the gelatin into the mixture.

12) Fold in sieved cheese.

13) In a bowl, stiffly beat egg whites.

14) Add this to the pudding and cheese mixture.

15) Pour the mixture into crumb shell.

16) Place inside refrigerator to chill into refrigerator for about 4 hours.

SERVING

17) Serve by topping with Cranberry-Nut Glaze.
