Sweet Potato Pecan Pie

Ingredients

9 inch pie shell 1
Brown sugar 1 Cup (16 tbs) (packed)
Salt 1/2 Teaspoon
Pumpkin pie spice 2 Teaspoon
Eggs 3
Milk 1 1/2 Cup (24 tbs)
Sweet potatoes 1 1/2 Cup (24 tbs) , cooked mashed
Butter 2 Tablespoon , melted
Dark brown sugar 1/4 Cup (4 tbs)
Pecans 1 Cup (16 tbs) , melted
Pumpkin pie spice 1 Teaspoon

Directions

GETTING READY

1 Preheat the oven to 425°Fahrenheit.

2 Line a 9-inch pie plate with pastry and making a high fluted edge.

MAKING

3 In a bowl, combine sugar, salt and pumpkin pie spice.

4 Blend in eggs, mixing well.

5 Add in milk and sweet potatoes and mix thoroughly.

6 Into the pie shell, pour the mixture.

7 Bake in the oven for 10 minutes.

8 Lower the heat to 300°Fahrenheit and bake for 30 minutes.

9 Meanwhile prepare the pecan topping: In a bowl, combine all the topping ingredients; mix well.

10 Top the pie with Pecan Topping;cover completely.

11 Bake for another 30 minutes or until silver knife comes out clean when inserted in center.

SERVING

12 Cut and serve.
