Carb Free Sausage And Sweet Potato Pie

Sausages 6
Sweet potatoes 4 Medium , peeled, sliced
Chicken stock 2 Tablespoon
Leek 1 , thinly sliced
Spring onions 2 , thinly sliced
Red onion 1 , thinly sliced
Mushrooms 1/2 Cup (8 tbs) , thinly sliced (Handful)
Crumbled feta cheese 1 Cup (16 tbs) (Large Handful)
Coconut oil 1 Teaspoon
Salt To Taste
Pepper To Taste



Microwave sweet potatoes for 6-8 minutes until soft and mash using masher.

Preheat the grill.



Heat coconut oil in a pan and sauté onions, red onion, leek, mushroom for 4-5 minutes.

Remove the skin and add sausages to the pan. Saute until sasusage browns.

Add any favourite vegetable like pepper, broccoli of your choice.

Add chicken broth, salt, pepper and allow to simmer for 2-3 minutes.

Transfer the mixture to baking dish and top with mashed sweet potato.

Sprinkle cheese over it and grill for 2-3 minutes.



Serve and enjoy!
