Mini Pumpkin Pie Bites

These mini pumpkin pie bites pack in all the big flavors of homemade pumpkin pie. The from-scratch crust is flaky and tender with a buttery flavor and the pumpkin filling is creamy, sweet and spiced just right! Top with a dollop of cinnamon whipped cream and you have an adorable, portable dessert that will disappear in record speed.


For pie crust (all ingredients should be really cold)
All purpose flour 1 1/4 Cup (20 tbs)
Sugar 1 Tablespoon
Salt 1/2 Teaspoon
Butter 1/4 Cup (4 tbs) , chopped
Butter flavored shortening 1/4 Cup (4 tbs)
Cold water 1/4 Cup (4 tbs)
For pumpkin filing
Brown sugar 1/4 Cup (4 tbs)
White sugar 1/4 Cup (4 tbs)
Butter 4 Tablespoon , softened
Egg 1
Heavy whipping cream 1/2 Cup (8 tbs)
Flour 1 Tablespoon
Pumpkin pie spice 1 Teaspoon (add more if desired)
Vanilla extract 1/2 Teaspoon
Canned pure pumpkin 1 Cup (16 tbs)
