Quickles - Quick Vinegar Pickles

These quick pickles are incredibly versatile and take only minutes to make. I love them with rice or sweet shiitake and they go well with just about anything. Best thing is that they last for weeks in the fridge. Let's make some pickles!


English cucumber 1 , 1/4 inch slices
Kosher salt 2 1/4 Teaspoon ((Soaked in brine and brine discarded))
Hot water 1 Cup (16 tbs)
Rice vinegar 1/2 Cup (8 tbs)
Sugar 6 Tablespoon



1. In a mixing bowl, place the cucumber slices, sprinkle salt and mix well. Set aside for 10 minutes.

2. In a cup, mix hot water, rice vinegar, and sugar. Whisk until sugar dissolves.

3. Shake off excess moisture from the cucumber and add it to the vinegar mixture. Mix well and let sit for 1 week for at least 20 minutes.


4. Serve and enjoy!
