One Sweet Peppers from Sunset Produce make this dish pop with flavor and vibrant color. There is nothing more fragrant than grilled and marinated sweet peppers, they play with your senses and practically beckon the sun to shine on you. I am using SUNSET One Sweet peppers for this dish, not only for the vibrant flavor, but also because sustainability is one of the pillars of the Sunset Produce company ethos all the way from their Earth friendly growing stages to the packaged product on the shelf making their produce all the more delightful to eat.

Sweet peppers 6
Olive oil 7 Tablespoon
Garlic 2 Clove (10 gm)
Balsamic vinegar 2 Tablespoon
Fresh oregano leaves 2 Tablespoon
Salt 1 Pinch
Pepper 1 Pinch

1. Core the peppers and then grill them until they are tender and black.

2. Remove from the heat and place in a bowl with cling film to allow the skins to soften and slide off.

3. Once cool enough to handle, peel, chop and then place in a jar with the any leftover pepper juices, oregano, vinegar, a pinch of salt and pinch of pepper.

4. Serve as desired.
