Corn Relish With Cider Vinegar

Cider vinegar 2 Cup (32 tbs)
Sugar 1 Cup (16 tbs)
Dry mustard 4 Teaspoon
Salt 2 Tablespoon
Pepper 1/4 Teaspoon
Celery seed 1 Tablespoon
Cabbage 2 Cup (32 tbs) , thinly sliced
Onions 2 Medium , sliced
Green peppers 2 , cleaned and cut into 1 inch squares
Red pepper 1 , cleaned and cut into 1 inch squares
Cold water 4 Tablespoon
Cooked whole kernel corn 6 Cup (96 tbs) , well drained (Or Canned)



1) In a large saucepan or Dutch oven, add in the cider vinegar, sugar, dry mustard, salt, pepper and celery seed. Heat the mixture.

2) Meanwhile, into the blender add in 1/3 of the cabbage, onion and peppers. Add in cold water to cover.

3) Using the Chop blade, chop the vegetables in batches, till they move to the base of the blade.

4) Transfer the mixture into a sieve. Drain.

5) Add the vegetable into the Dutch oven. Finish chopping the rest of the veggies similarly.

6) Add in corn to the oven.

7) Cook on low flame for about 45 minutes while stirring occasionally.

8) Transfer the relish into sterilized jars. Seal well before storing.


9) The corn relish is a great accompaniment to burgers and sandwiches.
