MAKING
1. In a large bowl, combine green tomato, bell pepper, and onion. Mix well and set aside.
2. In a saucepan, add vinegar, sugar, salt, celery seed, mustard seed, red pepper flakes, and bay leaves. Place the saucepan over medium flame and bring the mixture to a boil. Reduce heat to low, stir occasionally and simmer for another 5 minutes.
3. Pour mixture into the bowl with tomato and pepper. Stir well.
4. Cover the bowl with plastic wrap and refrigerate for at least one hour or until ready to serve. Remove bay leaves when ready to serve.
