Betty's Pickled Green Tomato Relish

Betty demonstrates how to make a gorgeous and tasty Pickled Green Tomato Relish. This is a refrigerated relish that can be served alongside a sandwich or a main entree.

Ingredients

Chopped green tomatoes 2 Cup (32 tbs)
Chopped green bell pepper 1 Cup (16 tbs)
Chopped onion 3/4 Cup (12 tbs)
White vinegar 1/2 Cup (8 tbs)
Sugar 2 Tablespoon
Salt 1 Teaspoon
Celery seeds 1 Teaspoon
Mustard seed 1 Teaspoon
Red pepper flakes 1 Teaspoon
Bay leaf 2

Directions

MAKING

1. In a large bowl, combine green tomato, bell pepper, and onion. Mix well and set aside.

2. In a saucepan, add vinegar, sugar, salt, celery seed, mustard seed, red pepper flakes, and bay leaves. Place the saucepan over medium flame and bring the mixture to a boil. Reduce heat to low, stir occasionally and simmer for another 5 minutes.

3. Pour mixture into the bowl with tomato and pepper. Stir well.

4. Cover the bowl with plastic wrap and refrigerate for at least one hour or until ready to serve. Remove bay leaves when ready to serve.

 

SERVING
