How to Cook Ground Beef & Rice Stuffed Peppers

Web chef, Kimberly Turner, shares with you How to Cook Ground Beef Rice Stuffed Peppers!


Green pepper 6
Tomato 1 Large , sliced
Dill sprig 6
Chicken stock 3/4 Cup (12 tbs)
Pepper To Taste
For beef mixture
Extra lean ground beef 1 Pound
Oil 1 Tablespoon
Fresh dill 2 Tablespoon , chopped finely (1
Kampot pepper 7 , ground (6
Salt To Taste
Fresh parsley 2 Tablespoon , chopped finely (1
Red wine 3 Tablespoon (2
For stuffing
Cooked rice 1 Cup (16 tbs) (as needed)
Salt and pepper To Taste
Cayenne pepper To Taste
Smoked paprika 1/4 Teaspoon



1. Gently remove the top of peppers and scrape out the seeds.

2. Preheat oven to 350 degree F.


For Beef Mixture:

3. In a frying pan, pour oil and brown ground beef in it.

4. Add dill, pepper, salt and parsley (if using) and cook until done.

5. Drain off excess fat (if any) from meat, pour red wine, stir and let reduce. Remove the pan from heat and let cool.

6. Slice tomato into 6 slices and set aside. You can chop up the ends and add it to the beef mixture.

For Stuffing:

7. Season rice with salt, pepper and cayenne pepper. Mix well and add the beef mixture (as needed). Add paprika and mix well.


8. In loaf pan, place the peppers and stuff them with the stuffing mixture.

9. Lay dill sprig on top of each pepper, top with tomato slice, and place the loaf pan on a cookie sheet.

10. Pour stock into the loaf pan, season with pepper, pop in oven and bake for 30 minutes. 11. After 30 minutes, cover loosely with greased foil and bake for another 30 minutes or until done.


12. Serve with sour cream on top and enjoy!


You can add onion and garlic into the meat while browning.
