Soya Stuffed Roasted Bell Peppers

Stuffing Bell peppers is an elegant way of presenting this low calorie vegetable and it makes for a great side dish to present at the dinner table when you entertain guests.


Bell pepper 4 Small
Olive oil 1 Teaspoon
Garlic 4 Clove (20 gm) , chopped finely
Green chili ginger paste 1 1/2 Teaspoon
Onion 1 Large , chopped finely
Tomato 2 , chopped finely
Soy granules 1 Cup (16 tbs) , cooked, drained
Reduced fat low sodium cheese 4 Tablespoon , grated (Cheddar)
Salt To Taste
Olive oil cooking spray 2 , spray



1. Preheat the oven to 350 degrees F.

2. Prepare the soy granules by soaking in boiling water for 5-8 mins, drain and set aside.

3. Slit off the tops of the bell peppers.


4. In a skillet, heat the oil, saute the garlic, then fry the ginger green chili paste.

5. Add the chopped onions and saute for 5 minutes.

6. Add the chopped tomatoes and saute for another 8- 10 minutes.

7. Next add the cooked soya granules, salt to taste and mix well. Cook for 5 minutes and then turn off the gas.

8. Stuff the bell peppers with the above mixture, top with grated cheddar cheese, spray with olive oil and place in the oven.

9. Grill/Bake the bell peppers for 8-10 minutes till the cheese on top is gratinated.


10. Serve hot with toasted garlic bread and a glass of natural pomegranate juice.
