Savory Stuffed Peppers

Green peppers 3 Large
Chopped carrot 1/4 Cup (4 tbs)
Sliced green onion 1/4 Cup (4 tbs)
Cooking oil 2 Teaspoon
Canned corned beef hash 15 Ounce (1 Can)
Canned whole kernel corn 8 3/4 Ounce , drained (1 Can)
Shredded cheddar cheese 1/3 Cup (5.33 tbs)


Cut peppers in half lengthwise.

Remove seeds and membranes.

In a skillet cook carrot and onion in hot oil till tender.

Stir in hash and corn.

Spoon hash mixture into peppers.

Place in a shallow baking dish.

Seal, label, and freeze.

To serve, bake frozen peppers, covered, in a 375° oven about 1 hour or till heated through.

Sprinkle with cheese before serving.
