This is amazingly delicious and quick to make....you can eat is as a quick healthy snack or sweet natural dessert. They are scrumptious and very popular...double your recipe just to make sure you have enough for a couple of days.Get the whole family involved....fun!!
|Pecan butter||2 Cup (32 tbs) (Place 2 Cups Raw Pecans In Food Processor 5|
|Medjool dates||30 , pitted|
|Shredded dried coconut||1 1/2 Cup (24 tbs) (Organic)|
|Sea salt||1/2 Teaspoon|
|Pecans||1/2 Cup (8 tbs) , chopped|
|Dark chocolate pieces||3 (85% Dark Chocolate)|
1.In food processor add dates until smooth, it will become a ball. Add the "pecan butter," coconut, salt, and cinnamon. Process until everything is combined.
2. Remove from food processor and place in a bowl. Work in the chopped pecans until they all blended in the date mixture.
(I love using my hands for this part…really get the feel of it….)
3.Take some of the mixture and roll into balls, any size desired. You can even place them in individual muffin liners.
4.Store covered in the fridge for 1 hour.
5. This will make approximately 20 balls.
*Optional topping*; melt 3 pieces of 85% dark chocolate…1 minute in microwave…drizzle on top of pecan pie balls.
