GETTING READY
1. Grease a 13-inch by 9-inch by 2-inch baking dish with cooking oil spray and set aside.
2. Preheat oven to 350 degree F.
MAKING
For Peach Mixture:
3. In a medium-sized skillet, melt butter over low heat. Add brown sugar and sliced peaches. Stir and simmer for about 5 minutes or until soft. Set aside.
For Crust:
4. In a large mixing bowl, place yellow cake mix and cut softened butter using a pastry blender, until mixture is the texture of coarse cornmeal.
5. Into the greased baking dish, transfer the mixture and press into the bottom.
6. Use tongs to place softened peaches evenly over the top of the crust in baking dish. Pour sauce from peaches evenly over top.
For Topping:
7. In a bowl, beat egg yolks and sour cream, using an electric mixer on medium speed.
8. Pour egg mixture over peach and sauce layer, spreading to sides of baking dish.
9. Sprinkle top evenly with ground cinnamon.
10. Pop in oven and bake for about 30 minutes.
SERVING
11. Garnish with mint sprigs and serve warm or cold with a dollop of whipped cream or whipped topping.
TIPS
Sprinkle with ground cinnamon, if desired before serving.
