I'm joining the Meatless Monday movement once more with this Veggie Power Dish recipe. It's my boyfriend's favorite and since he's the one who got me into vegetarianism, I thought, why not feature it?
Cooked pasta | 180 Gram , precooked | |
Canned corn | 340 Gram | |
Cooked red kidney beans | 250 Gram , precooked | |
Cooked broccoli florets | 290 Gram , precooked | |
Mushrooms | 230 Gram , chopped | |
Leek | 220 Gram , chopped | |
Coconut oil | 1 Tablespoon | |
Salt | 1 Teaspoon | |
Pepper | 1 Teaspoon | |
Paprika powder | 1 Teaspoon | |
Coriandar powder | 1 Teaspoon | |
Chicken spices | 1 Teaspoon |
MAKING
1. In a large heated saucepan, add coconut oil and melt it. Stir in the leek and stir fry for about 3 minutes on medium high heat.
2. Add in the mushrooms, broccoli, red kidney beans, corn and stir fry for another 6 minutes on medium high heat.
3. Stir in the pasta and add in the spices of salt, pepper, paprika powder, dried coriander and chicken spices. Mix well and cook for another minute and switch off the heat.
SERVING
4. Serve the vegetable pasta hot in a serving bowl.
