Baked Eggplant and Whole Wheat Fettuccine

Ingredients

Whole wheat fettuccine/1/2 pound / 225 gram, dried fettuccine 1 Pound , broken (450 gram, fresh)
Eggplants 2 , cut into 1/2 inch slices
Salt To Taste
Freshly ground black pepper To Taste
Olive oil 85 Milliliter (1/3 cup)
Onion 1 , chopped
Garlic 1 Clove (5 gm) , crushed
Fresh tomatoes 1 Pound , peeled, seeded and chopped
Chopped fresh basil 2 Teaspoon
Zucchini 4 , sliced
Sliced button mushrooms 625 Milliliter (2 1/2 cups)
Wheat germ 45 Milliliter (3 tablespoon)
Chopped fresh parsley 45 Milliliter (3 tablespoon)
Mozzarella cheese 1/2 Pound , sliced (225 gram)
Cream 125 Milliliter (1/2 cup)

Directions

GETTING READY

1) Preheat the oven to 350°F (180°C).

2) Sprinkle the eggplant slices lightly with the salt, then allow to drain for 30 minutes and pat dry.

MAKING

3) In a pan, cook the fettuccine in the boiling water, until tender. Drain, stir in a little olive oil and keep aside.

4) In a saucepan, gently saute the onion and garlic in half the olive oil for 5 minutes, until softened.

5) Stir in the tomatoes, basil, salt and pepper to taste and simmer, uncovered, for about 12 minutes, until the sauce has thickened.

6) In a frying pan, saute the eggplant slices in rest of the oil, until golden, remove with a slotted spoon and keep aside.

7) Saute the zucchini, mushrooms and wheat germ, until tender, then remove and combine with the eggplant.

8) In a greased deep ovenproof dish, arrange half the fettuccine at the bottom. Sprinkle with half the parsley, then arrange half the eggplant mixture over the parsley and pour over half the tomato sauce over the eggplant.

9) Repeat the layers, then cover the last layer of tomatoes with the mozzarella cheese slices and pour over the cream.

10) Bake, uncovered, in the preheated oven for 30 minutes.

SERVING

11) Serve the Baked Eggplant and Whole Wheat Fettuccine, immediately on individual serving plates.
