Creamy Chicken And Leek Fettuccine

Creamy Chicken and Leek Fettuccine is a delicious main meal, perfect for weeknight after work. Chicken is combined with leek and broccolini in a creamy parmesan sauce - give it a go!


Chicken breast fillet 500 Gram , chopped into chunks
Leek 1 , thinly sliced (pale section only)
Fettuccine 500 Gram , cooked as per packet directions
Cream/375ml can of evaporated milk 1 1/2 Cup (24 tbs)
Broccolini 200 Gram , trimmed (1 bunch)
Freshly chopped parsley 1/4 Cup (4 tbs)
Grated parmesan cheese 1/2 Cup (8 tbs) (plus extra for garnish)
Salt To Taste
Pepper To Taste



Cook fettuccine as per package directions. Reserve 1 cup of cooking water. Drain excess water once done.


In a large frying pan, heat olive oil and fry chicken pieces in it. Once done, transfer to a bowl.

Add leek and cook for 5 minutes.

Add chicken, cream, pasta cooking water, salt and bring to boil.

Reduce temperature and add cheese, broccolini and stir well.

Add the mixture to drained pasta and give a stir.


Serve and enjoy!
