Creamy Chicken and Leek Fettuccine is a delicious main meal, perfect for weeknight after work. Chicken is combined with leek and broccolini in a creamy parmesan sauce - give it a go!
|Chicken breast fillet||500 Gram , chopped into chunks|
|Leek||1 , thinly sliced (pale section only)|
|Fettuccine||500 Gram , cooked as per packet directions|
|Cream/375ml can of evaporated milk||1 1/2 Cup (24 tbs)|
|Broccolini||200 Gram , trimmed (1 bunch)|
|Freshly chopped parsley||1/4 Cup (4 tbs)|
|Grated parmesan cheese||1/2 Cup (8 tbs) (plus extra for garnish)|
Cook fettuccine as per package directions. Reserve 1 cup of cooking water. Drain excess water once done.
In a large frying pan, heat olive oil and fry chicken pieces in it. Once done, transfer to a bowl.
Add leek and cook for 5 minutes.
Add chicken, cream, pasta cooking water, salt and bring to boil.
Reduce temperature and add cheese, broccolini and stir well.
Add the mixture to drained pasta and give a stir.
Serve and enjoy!
