I am always looking for easy recipes, that taste great and are healthy! Here's a great vegetarian recipe for you to try: Tomato Lentil Pasta. Yummy! All of it delivered to my house by Hello Fresh, ready to cut and cook.

Ingredients

Onion 1 Cup (16 tbs) , thinly sliced
Tomato 1 Cup (16 tbs) , diced
Arugula greens 1 Cup (16 tbs) , chopped (coarsely)
Lentils 1 Cup (16 tbs)
Pasta 1/2 Pound
Thyme sprig 1
Parmesan cheese 1 Cup (16 tbs)
Juice of lemon 1
Chili flakes To Taste
Salt and pepper To Taste

Directions

GETTING READY

Bring large pot of salted water to boil.

Rinse and drain the lentils

MAKING

Add lentils to separate pot and add enough water to cover it one inch. Simmer for 20-25 minutes until tender.

Meanwhile, Pour some oil in the pan and cook the onions for 6 minutes till golden brown. Season with salt.

Put pasta to boiling water for 10 minutes.

Pour 2 tablespoon of water in onions, add tomatoes and cook for 3-5 minutes.

Add whole spring of thyme.

Remove thyme after cooking.

Add chili flakes, pasta, lentils and arugula to tomatoes mixture, lemon juice and some salt and pepper.

SERVING

Top with parmesan cheese and serve
