Pineapple Parfait

Ingredients

Unsweetened crushed pineapple 8 Ounce , undrained (1 Can)
Unflavored gelatin 1/4 Ounce (1 Envelope)
Sugar 1/4 Cup (4 tbs)
All purpose flour
Eggs 3 Small , separated
Skim milk 1 Cup (16 tbs)
Grated orange rind 1 Teaspoon

Directions

MAKING

1 Drain the pineapple.

2 Reserve 1/2 cup juice and keep aside.

3 Add gelatin in the reserved pineapple juice and soften.

4 Set aside.

5 In a medium saucepan, add sugar and flour, mixing well.

6 In a bowl, beat egg yolks and milk.

7 gradually stir into the sugar mixture.

8 Cook over low heat, stirring constantly, for 6 to 8 minutes or until mixture coats a spoon.

9 Remove from the heat.

10 Blend in the gelatin mixture, pineapple, and orange rind until well blended.

11 In another bowl, beat egg whites until stiff peaks form.

12 Gradually fold into the pineapple mixture.

13 Transfer into parfait glasses.

14 Place in the refrigerator and chill until firm.

SERVING

15 Serve chilled.
