IHOP CinnaStax Pancakes

Don't you wish you could make IHOP Cinnastax pancakes just like they do? If you love cinnamon rolls you will love these pancakes. These buttermilk pancakes are made with a cinnamon layer, and then topped with a cream cheese topping. These are hard to beat and these would be perfect for a Sunday Brunch.

Ingredients

For cinnamon layer
Butter 1/2 Cup (8 tbs) , softened
Packed brown sugar 1 Cup (16 tbs)
Ground cinnamon 1 Tablespoon
Cake flour/All purpose 2 Teaspoon
Salt 1/8 Teaspoon
Vanilla extract 1/4 Teaspoon
For cream cheese topping
Butter 1/4 Cup (4 tbs) (1/2 stick)
Cream cheese 4 Ounce , softened
Powdered sugar 1 Cup (16 tbs)
Milk 1 Tablespoon
Vanilla extract 1/2 Teaspoon
For pancake
All purpose flour 1 1/4 Cup (20 tbs)
Baking soda 1 1/2 Teaspoon
Sugar 2 1/2 Teaspoon
Salt 1/2 Teaspoon
Buttermilk 1 1/2 Cup (24 tbs) (plus to up 1/4 cup more if you need)
Vegetable oil 2 Tablespoon
Eggs 1 , lightly beaten
Nonstick cooking spray 1 Tablespoon (as needed)

Directions

MAKING

For Cinnamon Layer

1. In a small bowl, mix together butter, brown sugar, cinnamon, cake flour, salt, and vanilla into a nice thick paste. Set aside.

For Cream Cheese Topping

2. In a bowl, beat cream cheese and the butter until light and fluffy.

3. Gradually add sugar and beat until incorporated. Pour vanilla and milk. Mix well.

For Pancakes:

4. In a large bowl, combine flour, baking soda, sugar, and salt. Mix well.

5. Add buttermilk, oil, and egg. Beat into a smooth batter.

6. Heat a skillet or an electric griddle to 350 and grease with non-stick spray. Pour about 1/2 cup of batter to form a 4-inch pancake. Flip when small bubbles come on top and then cook on other side until done.

FINALIZING

7. Spread 2 teaspoons of the cinnamon mixture over one pancake, layer another pancake on top, spread 2 more teaspoons of cinnamon mixture over the top, and then drizzle with the cream cheese topping.

SERVING

8. Serve and enjoy!

TIPS

Leftover cinnamon mixture can be served with toast.
