Healthy Wheat And Blueberry Pancakes

Blueberry pancakes can be made at home with very little effort and time. The result is soft and fluffy pancakes that are better and healthier than store bought mixes. Healthy pancakes are low in fat and calories and full of the goodness of fresh fruits and whole wheat. A nutritious breakfast and a great way to begin the day!


Whole wheat flour 1 Cup (16 tbs)
Sugar 2 Teaspoon
Low sodium baking powder 1 Teaspoon
Baking soda 1 Teaspoon
Applesauce 2 Tablespoon
Salt 1 Teaspoon
Eggs 1 Large , beaten
Buttermilk powder 4 Tablespoon
Olive oil 2 Teaspoon
Skim milk 1 Cup (16 tbs)
Fresh bluberries 1 Cup (16 tbs)




1. In a medium bowl, stir together the whole wheat flour, sugar, baking powder, baking soda, low fat buttermilk powder and salt.

2. Add in the beaten egg to the skim milk and whisk.

3. Add in the wet ingredients to the flour mixture and stir until just combined.Ensure that the mixture is lump free.

4. Add in 2 tablespoons of the applesauce and stir.

5. Heat a griddle or large skillet over medium-high heat and brush lightly with the olive oil

6. Pour in ¼ cup of pancake batter, and sprinkle with blueberries. Cook 1 or 2 minutes until done.


These pancakes can be served hot or cold based on your liking.
