Whole wheat flour | 3/4 Cup (12 tbs) | |
Light brown sugar | 3 Tablespoon | |
Baking powder | 1 Tablespoon | |
Kosher salt | 1/2 Teaspoon | |
Beet | 2 Medium , pureed | |
Milk | 1 1/4 Cup (20 tbs) | |
Greek yogurt | 1/3 Cup (5.33 tbs) | |
Egg | 1 Large | |
Unsalted butter | 3 Tablespoon | |
Vanilla extract | 1 Teaspoon | |
Oil | 1 Teaspoon |
MAKING
1. In a mixing bowl, sift in all-purpose flour, whole wheat flour, light brown sugar, baking powder and kosher salt.
2. In another bowl, combine beet puree, Greek yogurt, egg, unsalted butter and vanilla extract.
3. Add dry mixture to the batter and mix well.
4. On a griddle heated over medium heat, smear some oil and spoon over pan cake batter. Fry for 2 minutes on each side.
SERVING
5. Serve with honey or maple syrup. You could also serve it with butter and raspberry sauce.
