Gingerbread Pancakes

Ingredients

All purpose flour 2 1/2 Cup (40 tbs)
Baking powder 1 Teaspoon
Baking soda 1 Teaspoon
Salt 1/2 Teaspoon
Ground cinnamon 1 1/2 Teaspoon
Ground ginger 1 1/2 Teaspoon
Ground nutmeg 1 1/2 Teaspoon
Ground cloves 1/4 Teaspoon
Eggs 3
Firmly packed brown sugar 1/4 Cup (4 tbs)
Buttermilk 1 Cup (16 tbs)
Water 1 Cup (16 tbs)
Brewed coffee 1/4 Cup (4 tbs)
Butter 1/4 Cup (4 tbs)

Directions

MAKING

1) Into a large bowl combine the flour, baking powder, salt, cinnamon, ginger, nutmeg, cloves and keep aside

2) Into a another bowl add the eggs and sugar and using an electric beater mix well

3) Add in the buttermilk, water, coffee and butter and mix well

4) Tip this into the flour mixture and mix well

5) Into a greased griddle of skillet, pour about 1/4 cup of the batter

6) Fry the pancake on one side till lightly browned, flip to fry the other side

SERVING

7) Serve the pancakes with maple syrup or apple sauce
