Cheese Latkes Pancakes

Egg 1 Medium , beaten
Cottage cheese 1/3 Cup (5.33 tbs)
Skim milk 1/3 Cup (5.33 tbs)
Salt 1/4 Teaspoon
Enriched white bread slices 1 , made into crumbs
Blueberry topping 1 Cup (16 tbs)


In bowl combine all ingredients except Blueberry Topping.

Using a tablespoon, drop mixture by the spoonful onto a preheated nonstick skillet.

Brown lightly; turn with a spatula to brown other side.

Serve warm with Blueberry Topping.
