Piña colada pancakes with coconut milk, fresh pineapple and rum sauce.

Brown sugar | 2 Tablespoon | |
Vanilla extract | 1 Teaspoon | |
All purpose flour | 1 1/4 Cup (20 tbs) | |
Baking soda | 1 Teaspoon | |
Salt | 1/2 Teaspoon | |
Diced pineapple | 1/2 Cup (8 tbs) | |
Coconut chips | 1/2 Cup (8 tbs) | |
Oil | 2 Tablespoon (for the griddle) | |
Whipped cream | 2 Tablespoon | |
For rum syrup: | ||
Maple syrup | 1/2 Cup (8 tbs) | |
Dark rum | 2 Tablespoon |
MAKING:
1.In a medium bowl, whisk together egg, coconut milk, sugar and vanilla.
2.In another bowl, combine flour, baking soda, salt and mix well.
3.Combine flour mixture with egg mixture. Add pineapple and mix well.
4.Heat and grease griddle. Pour batter (1/4 cup of batter for each pancake) and cook on both sides as shown in the video.
5.In a small pot, stir maple syrup in low heat. Stir in rum and mix well.
SERVING:
6.Serve with sauce, whipped cream and enjoy!
