Shredded apple gives these light fluffy pancakes some incredible flavor!

Eggs | 2 Large | |
Milk | 1 1/2 Cup (24 tbs) (375 mL) | |
Vanilla | 1 Teaspoon | |
All purpose flour | 2 Cup (32 tbs) (500mL) | |
Baking powder | 1 Teaspoon | |
Sugar | 1/4 Cup (4 tbs) | |
Apples | 2 Medium , peeled and coarsely grated | |
Other ingredients | ||
Butter/Vegetable oil | 2 Tablespoon (as needed for frying) | |
Confectioners sugar | 2 Tablespoon (as needed for topping) |
MAKING
1. In a bowl, combine eggs, milk and vanilla. Whisk well.
2. In a separate bowl, add flour, baking powder, and sugar. Mix well and gently stir the mixture into the egg milk mixture.
3. Fold in grated apples.
4. Place a skillet over medium flame and heat a thumb sized piece of butter in it.
5. Drop 1/3 cup of batter and flatten it out a little. Cook until golden brown underneath, then flip and cook for an additional two to three minutes.
SERVING
6. Top with powdered sugar and serve immediately.
TIPS
Alternatively keep on a rack in a 200 degree F or 100 degree C oven until you have enough ready to serve.
