Radish and Cucumber Bruchetta

OK I know promoting radishes is a tough sell to just about any kid. I like the crispy texture of them. What I love about this recipe is when you sauté radishes they turn a bit sweeter and I like that. Combining the sauté with the cucumbers provides an additional smooth flavor. Served on lemony toast is an incredible taste experience.


Olive oil 4 Tablespoon , divided
Radishes 8 Large , sliced (or 16 medium to small)
Seedless cucumber 1/2 , sliced in half moon rounds
Garlic 1 Clove (5 gm) , sliced (Optional)
Salt and pepper To Taste
French bread slices 8 ( to inch thick)
Fresh lemon juice 2 Tablespoon
Parsley 2 Tablespoon , chopped
Dill 1/2 Teaspoon



In small sauté pan, pour 1 to 2 tablespoons of olive oil, garlic and radishes. Sauté for 5 minutes and then add the cucumbers and sauté for an additional 2 to 3 minutes.

Season with salt and pepper.

In a small bowl, whisk together lemon juice and remaining olive oil.

Place French bread slices on baking pan and brush with olive oil – lemon mixture.

Sprinkle the fresh parsley on the bread. Broil bread in oven until golden and crispy.


Place a serving of the radish and cucumber mixture on each toast and garnish with dill. Serve at room temperature.
