Beet Salad with Apples and Simple Viniagrette

If you have never tried beets you are missing out on a great flavor

Ingredients

For salad
Beets 3 , peeled
Olive oil 1 Tablespoon
Salt and pepper To Taste
Sliced romaine lettuce 5 Cup (80 tbs)
Apple 1 Large , large dice
Thinly sliced sweet onion 1/4 Cup (4 tbs)
Shredded parmesan 1/4 Cup (4 tbs)
For vinaigrette
Light oil 3 Tablespoon
White vinegar 2 Tablespoon
Fresh parsley 2 Tablespoon , chopped finely (or 1 T dried)
Salt and pepper To Taste

Directions

GETTING READY

Wash beets and trim the top and bottom of stems.

Preheat oven to 375 degrees F.

MAKING

Place beets in a foil packet drizzled with olive oil and salt and pepper to taste. Bake for 45 minutes.

Remove from oven and slice into medium wedges. Set aside.

For vinaigrette – in a bowl, whisk together all the ingredients.

SERVING

On a large platter, layer the salad ingredients on the base of lettuces starting with the beets and pour the vinaigrette. Serve and enjoy.
