Orange Castles

Butter 4 Ounce
Sugar 4 Ounce
Eggs 2
Self raising flour 4 Ounce
Orange 1 , rinded and rind grated
Sultanas 3 Ounce



1. In a large bowl, cream the butter and sugar till light and fluffy.

2. Crack one egg at a time into the butter mixture and beat well during each addition. Alternate the eggs one at a time with a little flour.

3. Slowly stir in the orange rind and a little milk to wet the mixture together to make a soft batter. Pour this mixture into 8 individual buttered castle pudding moulds, cover with foil and steam for 45 minutes.

4. Cool, and remove from moulds.


5. Serve warm or pack into polyethylene bags to freeze
