Oven Baked Mini Omelettes

Oven Baked Mini Omelettes are quick to make and sensationally delicious. Eat them immediately, or freeze them for later! Plus you can use whatever vegetables and meats you have on hand, so come up with your own combination of flavours - give it a go!


Eggs 8
Brown onion 1 , diced
Shredded ham/Bacon /chicken 1/2 Cup (8 tbs)
Milk 1/4 Cup (4 tbs)
Oil 1 Teaspoon , divided (plus extra to grease muffin pan)
Baking powder 1/2 Teaspoon
Grated cheese 1 Cup (16 tbs)
Salt To Taste
Pepper To Taste
Cooking spray 1



Preheat oven to 190C/375F.

Grease muffin pan with spray.


Heat a frying pan with oil and sauté onions and ham in it. Cook until done.

Divide the mixture among muffin tray and top with cheese.

In a jug, combine eggs, milk, oil, baking powder, salt, pepper and whisk well.

Pour the mixture over cheese layer in muffin tray and pop into oven.

Bake for 20-25 minutes.
