Pumpkin Caramel Oatmeal Squares

Nothing says fall like Pumpkin - and these squares are the perfect match for cooler weather.


Flour 2 Cup (32 tbs)
Rolled oats 2 Cup (32 tbs)
Firmly packed brown sugar 1 1/2 Cup (24 tbs)
Baking soda 1 Teaspoon
Salt 1/2 Teaspoon
Ground cinnamon 1 1/2 Teaspoon
Ground ginger 3/4 Teaspoon
Ground nutmeg 1/4 Teaspoon
Melted butter 1 Cup (16 tbs)
Canned pumpkin 1 Cup (16 tbs)
Pure vanilla extract 1 Teaspoon
Caramels 30 , unwrapped
Milk 2 Tablespoon



Preheat oven to 350°F / 180ºC. Line a baking pan with foil and set aside.



In large bowl, mix together flour, oats, sugar, baking soda, salt, cinnamon, ginger and nutmeg.

Pour melted butter, and stir until mixture is blended and forms coarse crumbs.

Reserve ½ of this mixture for the topping. In the remaining mixture, stir pumpkin and vanilla.  Set aside.

In a large bowl, add in the milk and caramels and microwave on high 2 to 3 minutes or until completely melted, stirring after every minute.

Press the pumpkin mixed oatmeal, evenly into the bottom of prepared baking pan. Pour the caramel mixture over it and spread evenly.

Sprinkle with reserved crumb mixture. Bake 30 to 35 minutes or until light golden brown.

Take out from the oven and cool in pan on wire rack.



Slice the bars and serve with tea / milk or coffee.
