Pineapple Walnut Stuffing

Butter 1 1/2 Ounce
White breadcrumbs 2 Ounce
Chopped canned pineapple 4 Ounce
Chopped walnuts 2 Ounce
Salt 1 Teaspoon
Lemon rind 1/2 , finely grated (Use Rind From 1/2 Fruit)
Whole chicken 4 Pound , cleaned



1) In a saucepan, melt the butter. Add in the breadcrumbs and saute for a couple of minutes, while stirring.

2) Add in the chopped pineapple, walnuts, salt, finely grated lemon and 1-2 tablespoons of pineapple juice, if desired, to make the mixture slightly moist. Mix well.

3) Take the chicken and stuff the above filling into its neck or body cavity. Shut the neck flap close under the wing tips.

4) Brush the chicken with melted butter all over.

5) Roast the chicken on a grill for about 40 minutes or till done.


6) Serve the Pineapple Walnut Stuffed Chicken garnished with pineapple rings and watercress arranged around a large serving tray. Sprinkle walnut halves on top.
