Healthy Cooking - Zucchini Noodles

ZUCCHINI NOODLES ARE A QUICK AND DELICIOUS ALTERNATIVE TO THE USUAL WHITE PASTA . THIS QUICK, SIMPLE AND DELICIOUS VEGGIE "NOODLE" IS MADE WITH ZUCCHINI. IN ABOUT 10 MINUTES YOU WILL HAVE A HEALTHY VEGETARIAN MEAL ANYONE CAN LOVE. THEY WON'T EVEN KNOW IT'S NOT REALLY ANGEL HAIR. BON APPETIT

Ingredients

Zucchini 1
Tomato sauce 1 Cup (16 tbs)
Fresh basil 10 Gram
Green onion 1 Cup (16 tbs)

Directions

GETTING READY

1. Wash the Zucchini and using a vegetable peeler take off the green layer of skin.

2. Using the julienne peeler make top to bottom swipes along the zucchini until reached to core.

3. Slice the core of the zucchini and set aside.

MAKING

4. Heat a large pan with little water until water begins to sizzle on the surface but, not sputter. Then add the noodles into the pan in small batches at a time. When all the noodles are in, continue to stir around the pan for 2 minutes or until the noodles are soft.

5. Remove from heat and set aside.

6. Add the Tomato Sauce to the pan on low heat.

7. Stir in sliced zucchini, green onion and basil. Cook until softened. Add the Noodles back into the pan to coat.

SERVING

8. Serve Zucchini noodles with fresh fruit juice.
